You don't need to worry about damaging the old finish with a kitchen cabinet cleaner, since it's going to be stripped off, so any good grease removing chemical will work ok. Most commercial household cleaners aren't strong enough to get right down to the bottom of caked on grease deposits, like the hinge imprint. You'll probably need to use something like paint thinner, lacquer thinner, denatured alcohol or a chemical designed for that type of cleaning, like the Prelude cleaner below.

Clean a small area of kitchen cabinet at a time, using lots of paper towels so the grease gets wiped off rather than spread around.
Unless you clean your kitchen cabinets over every inch with a very good grease cutting cleaner after every meal you cook or use of the oven, you have a slight film on your kitchen cabinets and it should be removed.
Dispose of the paper towels or other cleaning materials outside in a metal container with a tight fitting lid, because they will be highly combustible and could start a fire through spontaneous combustion if not disposed of properly.
